Last night I went to Cary’s house specifically to see if we could handle this dish from the second Babycakes NYC book. It’s kind of complicated, and it’s really too much work for one person, so I, as the more experienced baker, focused on the dough, while Cary managed the vegetables. It literally took three hours (well, partly because Cary took a few smoke breaks, but whatever), but oh. mah. GUH. It ended up being one of the best things I have ever tasted, and several slices, several episodes of The Wonder Years, 20 hours, and one unflattering photo later, I still feel that way.
There was also warmed apple cider, and the satisfaction that comes with finally learning how to digest daiya cheese. Easily the best Thursday night I’ve had in recent memory.
